Marinated Feta Cheese with Herbes de Provence
½ pound feta cheese, cut into ½-inch cubes
2 springs fresh rosemary
1 ½ Herbes de Provence
1 Tbs. lemon zest
1 tsp. whole black peppercorns
extra-virgin olive oil, to cover the cheese
Layer the cheese, lemon zest, and herbs in a jar. Pour in enough olive oil to submerge the cheese and then tightly cover the jar. Let the mixture marinate in the refrigerator for at least 24 hours. The marinated feta lasts for several weeks if refrigerated. After the cheese is gone, use the remaining olive oil to make salad dressing, or pour it over grilled veggies.
