Roasted Basil Tomatoes

This versatile dish offers an authentic taste of the Italian countryside.

These tomatoes are fantastic. Roasting tomatoes adds a sweet and rich flavor. Serve in salads, on top of grilled bread with ricotta, as a quick tomato sauce for pasta, or right out of the oven as a side dish.


You can chop the roasted tomatoes and fold them in with a dollop of room temperature butter. Use this on grilled steaks for the perfect compound butter.

 

These delightful roasted tomatoes offer an authentic taste of the Italian countryside. Remember, buy high-quality Roma tomatoes, as they are the stars of this dish. When choosing a Roma tomato, the skin should be free of blemishes, plump and juicy, with a bright red vibrant color.


The tomato should also smell fragrant, sweet, and summery. A high-quality extra-virgin olive oil will add tons of flavor to the tomatoes. These two ingredients are essential to the success of the dish.


Using a cast-iron skillet will ensure a beautifully roasted tomato bottom. Giving you full roasted flavor. Bon appetit.

 

Roasted Basil Tomatoes

YIELDS: 10 HALVES

PREP TIME: 10 MINUTES

COOKT IME: 15 MINUTES

SERVES: 4

 

5 Roma tomatoes, halved lengthwise

2 tsp extra virgin olive oil

2 tsp kosher salt

1 tsp freshly cracked black pepper

1 shallot, peeled and minced

3 closed garlic, peeled nad minced

1 tsp chopped rosemary

2 tbs basil, thinly sliced

 

Preheat the over to 500F.

Place the tomatoes skins side down in a medium cast-iron skillet.

Lightly drizzle the tomatoes with olive oil. Evenly distribute the salt, pepper, shallot, garlic, rosemary, and basil on each of the tomato  halves.

Place the cast-iron skillet in the over on the top rack.

Roast the tomatoes for 10 to  15 minutes, until the tomatoes are lightly charred and wilted. The flavoring ingredients on Hie tomatoes should look slightly browned.

Remove the tomatoes from the oven and allow to slightly cool before serving.
